Our Fullblood Wagyu Picanha is a beloved Brazilian cut and a true crowd-pleaser—celebrated for its rich marbling, tender texture, and signature fat cap that bastes the meat as it cooks. Cut from the top of the sirloin (also known as the rump cap), this steak is the star of Brazilian churrasco, where it’s traditionally grilled over open flames and sliced tableside for maximum flavor and flair.

Pro tip: Start cooking fat side down over medium heat to render that glorious fat, then finish over high heat for a perfect sear. Let it rest before slicing against the grain—flavor and tenderness guaranteed.

Each Picanha is roughly 2.5-3lbs

Black: Subtle buttery notes complement an outstanding tenderness, featuring a marbling percentage of 20-29%.  This exceeds the USDA Prime marbling standard of 8-13%, showcasing a superior level of quality.

Gold: This category delivers peak richness and tenderness, along with a rich buttery flavor, offering a premium steak experience with a marbling percentage of 30-39%. The rich marbling will leave you with a delightful, chapstick-like sensation on your palate.

Reserve: A rare class of exceptional beef, matching the high standards of Japanese quality and seldom available in the U.S., boasting a marbling percentage of 40% or more.
